Directions

1. Place sugar, syrup and water into a saucepan, stir over low heat until sugar dissolves.

2. Turn heat up to high then simmer until syrup becomes golden – do not stir, simply swirl the pan every few minutes to ensure even caramelisation.

3. Remove from heat, add salt and bicarbonate of soda and whisk rapidly as mixture foams.

4. Pour the mixture onto the popcorn then toss well to coat.

5. Lay out onto a greased tray in a single layer, then place into a preheated 200°C oven for 5 minutes.

6. Remove from the oven and leave to cool completely.

7. Once cooled, store in an airtight container.
